Probiotic Cashew Yoghurt
This is a vegan and gluten-free probiotic cashew yoghurt that is delicious, healthy and easy to make.

  • 2 cups of raw cashew nuts (soaked for at least 8 hour in water)
  • ½ cup of water
  • Powder contents from 2 probiotic capsules
  • 2-3 tbsp of maple syrup
  1. Soak the cashews in warm water for 8 hours or overnight. You could soak them in boiling water for 30 minutes if you are short of time.
  2. Drain and rinse the cashews.
  3. Add the cashews to a blender along with the water and maple syrup and blend until smooth.
  4. Place the blended cashews into a glass bowl and sprinkle the probiotic powder over them then stir in with a wooden spoon.
  5. Cover the bowl with a muslin cloth and leave it in a warm, dark place for 24 to 48 hours.
  6. Try the yoghurt after 24 hours. The texture should be foamy and it should taste slightly tart. If you leave the yoghurt for another 24 hours, it will be tarter, almost with a strong sour taste.
  7. Place the yoghurt in an airtight container and store in the fridge.
Make sure all kitchen utensils have been thoroughly cleaned to ensure they are sterile.
